Cheryl's Corner Cheddar Bay Biscuits

Like Red Lobsters
Cheddar Bay Biscuits

2 ½ cups Bisquick baking mix
 ¾ cup cold whole milk
4 tablespoons cold butter (1/2 stick)
 ¼ teaspoon garlic powder
1 heaping cup grated cheddar cheese

Bush on Top:
 2 tablespoons butter, melted
 ¼ teaspoon dried parsley flakes
 ½ teaspoon garlic powder
Pinch of Old Bay Seasoning  (this is my change to the recipe instead of salt)
Directions:
1. Preheat your oven to 400 degrees.
2. Combine Bisquick with cold butter in a medium bowl using a pastry cutter or a large fork. You don't want to mix too thoroughly. There should be small chunks of butter in there that are about the size of peas. Add cheddar cheese, milk, and ¼ teaspoon garlic. Mix by hand until combined, but don't over mix.
3. Drop approximately ¼-cup portions of the dough onto an ungreased cookie sheet using an ice cream scoop.
4. Bake for 15 to 17 minutes or until the tops of the biscuits begin to turn light brown.
5. When you take the biscuits out of the oven, melt 2 tablespoons butter is a small bowl in your microwave. Stir in ½ teaspoon garlic powder and the dried parsley flakes. Use a brush to spread this garlic butter over the tops of all the biscuits. Use up all of the butter. Makes one dozen biscuits.
*Note*
You may use your Redi Set Go Gt Xpress mini muffin pans for this recipe
just grease the muffin pan put a tablespoon of batter and let cook about 8-9 min.
*Note* For breakfast

make the biscuits, cut in half, cook up some sausage patties and some eggs with cheese melted on,  cut the eggs with a shot glass, and place a piece of egg on one half of biscuit and one sausage patty,  there you have it a cute Lil breakfast Sammy, and boy are they good. When you try these let me know how they came out!

Caramelized Onion Focaccia

Cheryl's Corner Recipe and Photo

½ cup mashed potatoes or flakes
3/4 cup water
2 tbsp. Olive oil
1 tbsp. sugar
1/2tsp salt
2 cups flour
1 1/2 tsp. Yeast
3/4 mozzarella cheese, shredded
2 tbsp. Parmesan cheese, shredded

Onion Topping:
1 cup Black olives
3 tbsp. butter
2 medium onions
2 cloves garlic minced
oregano *optional

Place all ingredients, except cheeses and onion topping, in your bread machine in the order recommended by the manufacturer.
When dough is finished, grease a pizza pan or cookie sheet.
Pat dough into a 12 inch circle on pan ~ this may take a while as it likes to shrink back up but keep working at it and you will get it patted out. Cover and let rise in warm place for about 30 minutes or until almost double.
While the dough is rising, prepare the onion topping. Melt butter in skillet over medium-low heat. Cook onions and garlic in butter 15 to 20 minutes, stirring occasionally until onions are brown and caramelized.

When dough has risen, heat oven to 400ยบ. Make deep depressions in dough at 1 inch intervals stick black olives in the dough. Spread topping over dough. Sprinkle with cheeses.
Bake 15 to 20 minutes or until edge is golden brown.
Cut into wedges and serve warm.
Serves 4-6

Cheryls Moist Bread Machine Cornbread

Cheryl's Corner Recipe and Photo

This is my almost famous cornbread in the bread machine recipe, you must use the quick bread, batter bread setting, and you must take out the mixer paddle when it beeps for you to add nuts or raisins, although those are not included in this recipe. Quick breads are called quick breads because you don't want to over mix them and if you just threw these ingredients into your bread maker and pushed bake, you would not get a good product in the end, it would be hard and tough.

 1 cup cornmeal
1 1/4cup flour
4 teaspoons baking powder
3/4 cup sugar
1 teaspoon salt
1 teaspoon vanilla (real vanilla beans)
2 eggs lightly beaten
1 cup milk
1 cup instant mashed potatoes ; (cooked,cooled)
1/4 cup melted butter or oil
Instructions
Follow the instructions that came with your bread machine in terms of which ingredients to put in the machine first. Make sure that you set your bread machine to (quick bread) Batter setting or cake setting, and just start your machine after all ingredients are placed in there, close the lid and when it beeps to put in the nuts(not for this recipe) take out the paddle so you wont have a hole in your bread to big, about 1 hour and a half in my bread machine. Enjoy! *Note* mix this with a spoon all the ingredients before you start your bread machine.
***NOTE***
to take this recipe up a notch, after you cut the corn bread
drizzle melted butter over your bread, Now its ready.
